  • 300 g flour
  • 2 g salt
  • 150 g caster sugar
  • 150 g softened butter
  • 60 g eggs
  • 24 g egg yolks

The Basque cake batter

  1. Make the Basque cake batter: combine the flour, salt, sugar, butter then add the eggs and egg yolks, mix quickly and form the dough into a ball.
  2. Refrigerate for at least 1 hour.

The Basque cake garnish

  1. Heat the milk.
  2. Mix The Laughing Cow® Professional Formula Plus, vanilla extract, eggs, sugar and flour.
  3. Pour the milk over this mixture and return to heat until boiling.
  4. Place the cream in the refrigerator.
  5. Line the tins with the cake batter and make the crowns.
  6. Cover with the cooked cream then with the jam.
  7. Apply garnish around the cakes and place the crown.
  8. Garnish and decorate with a fork.
  9. Bake in an oven at 180°C for 30 to 40 minutes depending on the size.
  10. Cool and serve.
