Ingredients
THe Basque cake batter
- 300 g flour
- 2 g salt
- 150 g caster sugar
- 150 g softened butter
- 60 g eggs
- 24 g egg yolks
The Basque cake garnish
- 200 ml milk
- 200 g The Laughing Cow® Professional Formula Plus
- vanilla extract
- 40 g eggs
- 20 g egg yolks
- 50 g caster sugar
- 30 g flour
- 350 g cherry jam
Preparation
The Basque cake batter
- Make the Basque cake batter: combine the flour, salt, sugar, butter then add the eggs and egg yolks, mix quickly and form the dough into a ball.
- Refrigerate for at least 1 hour.
The Basque cake garnish
- Heat the milk.
- Mix The Laughing Cow® Professional Formula Plus, vanilla extract, eggs, sugar and flour.
- Pour the milk over this mixture and return to heat until boiling.
- Place the cream in the refrigerator.
- Line the tins with the cake batter and make the crowns.
- Cover with the cooked cream then with the jam.
- Apply garnish around the cakes and place the crown.
- Garnish and decorate with a fork.
- Bake in an oven at 180°C for 30 to 40 minutes depending on the size.
- Cool and serve.
