Mushroom soup

With celeriac as a base, the mushroom soup gets a smooth texture with an earthly flavour. Add in some The Laughing Cow® Professional Original to make the soup even creamier. Sautéing the mushrooms before adding them to the soup brings out a maximum of flavour.

Ingredients

  • 200 g The Laughing Cow® Original
  • 500 g button mushrooms
  • 20 g butter
  • 1000 g celeriac
  • 1900 ml vegetable bouillon
  • salt and pepper

Preparation

  1. Wash the button mushrooms, cut them into a brunoise and sauté in the butter over high heat.
  2. Cook the celeriac in the vegetable bouillon, add The Laughing Cow® Professional and blend to obtain a homogeneous creamy soup.
  3. Check the seasoning before adding the mushrooms and serve hot.
