Ingredients

  • 2.5 gelatine sheets
  • 400 ml milk
  • 70 g caster sugar
  • 100 g Kiri® Professional Bloc
  • 2 gas cartridges

Preparation

  1. Soak the gelatine sheets in a bowl of ice water for a few minutes, then drain.
  2. Bring the milk and the sugar to a boil.
  3. Add the Kiri® Professional and mix until smooth.
  4. Add the gelatine sheets, then whisk and chill to stiffen in the refrigerator.
  5. Pour into a culinary siphon with gas cartridges.
  6. The preparation can now be used.
