Ingredients
- 2.5 gelatine sheets
- 400 ml milk
- 70 g caster sugar
- 100 g Kiri® Professional Bloc
- 2 gas cartridges
Preparation
- Soak the gelatine sheets in a bowl of ice water for a few minutes, then drain.
- Bring the milk and the sugar to a boil.
- Add the Kiri® Professional and mix until smooth.
- Add the gelatine sheets, then whisk and chill to stiffen in the refrigerator.
- Pour into a culinary siphon with gas cartridges.
- The preparation can now be used.
