  • 1 disc of puff pastry

The pre-bake puff pastry

  1. Grease the pie pan.
  2. Place the disc of puff pastry in the pan, covering the edges as well.
  3. Pierce the dough with a fork.
  4. Pre-bake the dough in the oven at 180°C for 8 to 10 minutes.

The cheese preparation

  1. Break the eggs into a bowl.
  2. Add the vanilla pod and sugar.
  3. Mix with a whisk to slightly dissolve the sugar in the mixture of eggs and vanilla.
  4. Add half of the Kiri® Professional, beat with a whisk until a homogeneous mixture is obtained.
  5. Add the other half of the Kiri® Professional and whisk.
  6. Pour the preparation over the pre-cooked puff pastry and fold in the freeze-dried raspberries.
  7. Bake the cheesecake until lightly brown.
