Prepare these creamy, chocolatey bites, featuring three types of chocolate – white, milk, and dark – expertly combined with Kiri® Professional Cooking & Spreading. Complete with a sprinkle of cocoa powder for the perfect finishing touch.

Ingredients

The white chocolate

Assembly

Preparation

  1. Melt each kind of chocolate over a hot water bath.
  2. For each preparation, mix and warm the indicated amounts of glucose syrup and milk.

The white chocolate

  1. Add the glucose syrup and milk into melted chocolate in two additions. Mix well with a rubber spatula to emulsify.
  2. Add the Kiri® Professional in several additions, mixing well before adding more.
  3. Transfer to a piping bag while still warm and fill the silicone mould.
  4. Freeze for 2 hours until solidified.

The milk chocolate

  1. Follow the same steps as for the white chocolate bites except for step 1: add the glucose syrup and milk in three times.

The dark chocolate

  1. In step 1, make sure to mix with energy: you want the texture to go from gritty to creamy. Steps 2, 3 and 4 are the same. Note that the emulsification for the dark chocolate will take place during step 2.

Assembly

  1. When solidified, remove the chocolates from the moulds.
  2. Sprinkle with cocoa powder. Serve.
