Ingredients
The white chocolate
- 200 g white chocolate 35%
- 120 g Kiri® Professional Cooking and Spreading
- 20 g milk
- 15 g glucose syrup
The milk chocolate
- 190 g milk chocolate 40%
- 115 g Kiri® Professional Cooking and Spreading
- 40 g milk
- 15 g glucose syrup
The dark chocolate
- 172 g bitter dark chocolate 66%
- 102 g Kiri® Professional Cooking and Spreading
- 78 g milk
- 14 g glucose syrup
Assembly

Preparation
- Melt each kind of chocolate over a hot water bath.
- For each preparation, mix and warm the indicated amounts of glucose syrup and milk.
The white chocolate
- Add the glucose syrup and milk into melted chocolate in two additions. Mix well with a rubber spatula to emulsify.
- Add the Kiri® Professional in several additions, mixing well before adding more.
- Transfer to a piping bag while still warm and fill the silicone mould.
- Freeze for 2 hours until solidified.
The milk chocolate
- Follow the same steps as for the white chocolate bites except for step 1: add the glucose syrup and milk in three times.
The dark chocolate
- In step 1, make sure to mix with energy: you want the texture to go from gritty to creamy. Steps 2, 3 and 4 are the same. Note that the emulsification for the dark chocolate will take place during step 2.
Assembly
- When solidified, remove the chocolates from the moulds.
- Sprinkle with cocoa powder. Serve.
