A traditional Italian risotto with autumn vegetables. Using pumpkin in addition to peas and spinach adds a nice colourful touch. The Kiri® Professional Cooking & Spreading provides the risotto with its creamy texture.

Ingredients

  • 430 g risotto rice
  • 20 ml olive oil
  • 20 g garlic
  • 154 g onions
  • 308 g pumpkin cubes
  • 19 ml vegetable bouillon
  • 1080 ml water
  • 92 g peas
  • 154 g spinach leaves
  • 123 g Kiri® Professional Cooking and Spreading

Preparation

  1. Sauté the rice with olive oil until transparent.
  2. Add the garlic, onions and pumpkin cubes.
  3. Allow the mixture to cook for 15 minutes.
  4. Dilute the bouillon in water.
  5. Moisten the risotto by regularly adding liquid until 3/4 of the cooking time.
  6. Then, stir in the peas, spinach and cook for another 12 minutes.
  7. Dilute the Kiri® Professional with the bouillon and incorporate the mixture into the risotto.
