Ingredients
- 60 g Boursin® Professional Cuisine Truffle Flavour
- 200 g raviolacci eggplant parmesan
- 15 g arugula
- 80 g grilled zucchini
- 15 g parmesan cheese flakes
Preparation
- Gently wash and slice the zucchini. Season with salt,
- Grill the zucchini on both sides using a chargrill. Do not overcook – keep them slightly firm.
- Cook the raviolacci in simmering water for 3 minutes.
- In a pan, add the Boursin® Professional Cuisine – Truffle Flavour base and a bit of pasta cooking water.
Stir until well combined. - Once cooked, transfer the raviolacci into the truffle cream sauce and gently mix to coat.
- Carefully plate the raviolacci in a deep dish with the grilled zucchini and fresh arugula. Finish with shaved Parmesan cheese for garnish.
