Ingredients

  • 60 g Boursin® Professional Cuisine Truffle Flavour
  • 200 g raviolacci eggplant parmesan
  • 15 g arugula
  • 80 g grilled zucchini
  • 15 g parmesan cheese flakes

Preparation

  1. Gently wash and slice the zucchini. Season with salt,
  2. Grill the zucchini on both sides using a chargrill. Do not overcook – keep them slightly firm.
  3. Cook the raviolacci in simmering water for 3 minutes.
  4. In a pan, add the Boursin® Professional Cuisine – Truffle Flavour base and a bit of pasta cooking water.
    Stir until well combined.
  5. Once cooked, transfer the raviolacci into the truffle cream sauce and gently mix to coat.
  6. Carefully plate the raviolacci in a deep dish with the grilled zucchini and fresh arugula. Finish with shaved Parmesan cheese for garnish.
