Ingredients

  • 200 g tortelloni ricotta spinach
  • 60 g Boursin® Professional Cuisine Truffle Flavour
  • 55 g portobello
  • 25 g spinach leaves
  • 20 g roasted red onions
  • 25 g roasted parsnips
  • 25 g diced pumpkin

Preparation

  1. Gently wash and dice all the vegetables.
  2. Lightly sauté the diced vegetables in a pan. Do not
    overcook; they should remain slightly crisp.
  3. Cook the tortelloni in simmering water for 3 minutes.
  4. In a pan, add the Boursin® Professional Cuisine – Truffle Flavour base and a bit of pasta cooking water. Stir until fully combined.
  5. Add the cooked tortelloni and most of the sauté
    vegetable to the truffle cream sauce. Reserve a small
    portion of the vegetables for plating.
  6. Gently mix everything together, then serve in a deep
    plate. Garnish with the remaining vegetables for a
    fresh and colorful finish.
